Taco Soup (recipe from sister in-law)
5 cans beans, drained* (any kind you like - I usually do pinto, kidney, chili beans, black)
*don't drain chili beans
1 can corn, drained
1 32 oz. can/jar of vegetable juice
1 packet taco seasoning (or make your own from scratch)
1/4 lb ground beef (optional - I usually don't add this)
Pour everything into a pot and heat through. Serve with your favorite taco toppings - cheese, tomatoes, guacamole, chips, cilantro, sour cream, salsa, onions.
Super easy and super fast.
Every time I make this Third Daughter gobbles it up.
Multiple bowls of it.
Those are my favorite kinds of recipes.
This recipe makes lots. At least two full meals. With leftovers.
I usually freeze half of it, or give half of it away.
Also another reason why it's a favorite.

I make something similar to this that I love! It definitely makes tons and is so easy. Unfortunately I can't seem to eat it without an abundance of tortilla chips :)
