We have been loving this recipe for waffles lately. I'll make a big batch for me and the girls for breakfast and we'll eat them all week. They toast up nicely in the toaster oven as leftovers. I usually use the whole egg instead of egg whites (mostly because it's easier to throw the whole egg in) and they are still yummy.
